Kit Keenan Shares Delicious Creamy Butternut Squash Soup Recipe That You Won’t Even Notice Is Dairy-Free!

Bachelor Nation star and resident foodie Kit Keenan just shared an easy, healthy recipe that looks both delicious and perfect for staying warm.
If you’ve been keeping up with Kit since her time on Season 25 of “The Bachelor,” you know that she isn’t afraid to share her love of food.
Kit has posted countless recipes and food photos that are sure to make you hungry as you scroll through her feed.
Her latest post is a recipe you can easily make at home and you won’t even notice that this creamy soup is missing one major food group: Dairy.
Kit shared gorgeous photos of her creamy butternut squash soup topped with croutons and provided step-by-step instructions on how to make it at home.
The Bachelor Nation star starts by preheating her oven to 475 degrees before slicing two butternut squashes in half and cutting the top and bottom off a yellow onion.
Kit leaves the skin on the squash and on the onion when placing them skin side up on a baking sheet.

She coats the squash and onion generously with olive oil, salt, and pepper before baking them for 45 minutes to an hour, or until the squash is tender.
Once the squash and onion are thoroughly baked, Kit scoops out the soft interior of the squash with a spoon and places it in her blender.
She also removes the skin from the onion and adds it to her blender as well.
In addition to the onion and the squash, Kit adds one tablespoon of crushed garlic, ½ cup of coconut cream, ⅛ cup of vegetable broth, salt, and pepper to the blender.
She blends the mixture until smooth and the soup is ready to be served and topped with sage leaves, red pepper flakes, and croutons.
Kit makes her own homemade croutons by baking cubed sourdough bread tossed with olive oil, garlic powder, salt, and pepper at 475 degrees for about 10 minutes.
This soup will keep you wanting more all winter long, and it’s so creamy you won’t notice that it doesn’t have any milk in the recipe!
