Kit Keenan Reveals How She Meal Preps Cauliflower Gnocchi Recipe for the Week

And her most recent recipe isn’t just for one meal: Kit makes enough to prepare for the week and keep meals in her fridge that are easy to heat up.

Ingredients:
- 2 heads of broccoli
- 4 chicken sausage links
- ¼ cup of pesto
- 2 bags of frozen cauliflower gnocchi
- 2 lemons (for juice)
- 8 tablespoons of olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Salt
- Pepper
Instructions:
- Preheat your oven to 425 degrees.
- Chop 2 heads of broccoli into small florets.
- Add broccoli florets to a large bowl, add the juice of 2 lemons, 4 tablespoons of olive oil, salt, and pepper, and toss to coat florets.
- Chop 4 chicken sausage links into thin rounds.
- Toss chicken sausage and frozen cauliflower gnocchi in a bowl with 4 tablespoons of olive oil, 1 tablespoon of garlic powder, and 1 tablespoon of onion powder.
- Place broccoli onto a parchment paper-lined baking sheet and bake for 25 minutes.
- Place chicken sausage and cauliflower gnocchi onto a parchment paper lined baking sheet and bake for 30 to 35 minutes.
- Remove everything from the oven and place broccoli, chicken sausage, and cauliflower gnocchi in a large bowl with ¼ cup of pesto. Toss to coat.
- Enjoy with Parmesan cheese or vegan cheese to keep it dairy-free. Store extras in Tupperware in the fridge for weekly meal prep.
