Jillian Harris’ Recipe for Delicious Strawberry Rhubarb Muffins Will Get You Excited for Summer!

It’s officially summer, and that means so many fresh fruits and vegetables are perfectly in season.
And if you’re looking for a yummy recipe to make with some fresh strawberries and rhubarb, former Bachelorette Jillian Harris has you covered.
She took to Instagram to share her recipe for strawberry rhubarb muffins and wrote, “A few weeks ago, I picked a sh*t load of rhubarb down at the farm, a little too much for us to use up entirely, so I gave some away and used the rest to bake with. I tested out these rhubarb muffins, which were absolutely delicious, btw. So, if you’re looking for a recipe to use up some of your rhubarb, look no further!”
Many fellow Bachelor Nation stars showed Jillian’s recipe some love, including fellow former Bachelorette Desiree Siegfried, who commented, “YUMMM!” on Jillian’s post.

Ingredients:
- Flour
- Sugar
- Rhubarb
- Eggs
- Strawberries
- Vanilla extract
- Oats
- Salt
- Milk of your choice
- Baking powder
Instructions:
- Preheat the oven to 350F and line a 12-cup muffin tin with paper liners.
- In a large bowl, sift the flour, sugar, baking powder, and salt, and mix together with oats
- In another bowl, mix the wet ingredients like the eggs, vanilla extract, and milk of your choice until they are combined.
- Add the wet ingredients to the dry ingredients and fold together with a rubber spatula until incorporated.
- Chop up strawberries and rhubarb into quarter-inch pieces and fold into the mixed wet and dry ingredient batter.
- Divide the batter among the muffin tins and add an extra strawberry slice on top for garnish.
- Bake until the tops are golden brown — around 45 to 55 minutes.
- Eat and enjoy!
- You can store cooled muffins in a resealable container in the fridge for up to 5 days or in a freezer for up to 3 months.
