Peggy shared that her favorite holiday tradition is to “entertain, entertain, and entertain!”
She loves having family and friends over to her home and decorate her space while singing holiday music.
Peggy also loves cooking and shared some of her favorite holiday recipes with us, from desserts to casseroles.
However, if you want a recipe for her sangria, you’ll have to score an invite to her holiday gatherings because that secret is staying in the vault!

Peggy’s Holiday Roasted Vegetable Casserole
Instructions:
Make my simple casserole dish of white turnip, red onion, and fennel. Simply chop up the three vegetables into cubes or slices and place them on a baking pan. Drizzle with enough olive oil, kosher salt, and fresh ground pepper (I like to eyeball it!). Add some slices of garlic on top and roast at 400 degrees for about 45 minutes or until the veggies are tender. The combination of flavors in this pan work so well together. My family life was a little mixed up and the combo of flavors seems to work tastefully, just like this dish!
Peggy’s Christmas Bark
Instructions:
Line a cookie sheet with aluminum foil and then line the cookie sheet with saltine crackers. Melt two sticks of butter and add 1/2 cup of sugar to the melted butter then pour it all over the saltines. Bake this at 350 degrees for 10 minutes. Melt one regular bag of milk chocolate chips in the microwave for one minute and spread that over the saltines. Then crumble a fun size pack of Snickers bars and about 15 crumbled Oreo cookies over the chocolate saltines. And to make it look festive for Christmas, I like to sprinkle fine pieces of candy cane on top. Refrigerate, and when bark is hard, break it apart into uneven pieces to serve!
Peggy’s Seven Fishes
Instructions:
On Christmas Eve, I love to do seven fishes, with one of them being smelts, tiny fish. Rinse them well and pat them dry. Make a baggie filled with some flour, cornmeal, kosher salt, pepper, paprika, and cayenne pepper (if you like it a little spicy). I don’t measure anything, I eyeball it all! Add the smelts to the bag and shake to coat well. Then add to a hot pan of avocado oil and pan fry both sides. Let the fried fish drain on a paper towel and you can sprinkle it with parsley or just serve with lemon. Delicious, but not for everyone. Must like fish!
