EXCLUSIVE: ‘Golden Bachelor’s’ Anna Shares Her Favorite Day-After-Thanksgiving Breakfast

Bachelor Nation fans met Anna on Season 1 of “The Golden Bachelor,” and now, she is sitting with BachelorNation.com for an exclusive chat about her favorite holiday foods and traditions.
Anna told us that during the holiday season, she loves connecting with her family over delicious food, hiking, and board games (specifically Catan).
She also shared that for Thanksgiving, her family tradition is making delicious sweet potato waffles the day after the holiday.
Anna said, “It’s something I started when my girls were babies because I had sweet potatoes left over after making the usual side dishes. The girls loved it and it has stayed a tradition since. I’m very secretive about my recipes, but I’m happy to share this with our loyal Bachelor Nation fans!”
She continued on, sharing, “I have been making these waffles for 40 years. Now I make them on a monthly basis and keep them in the fridge for a snack with some yogurt and maple syrup.”
Anna’s Sweet Potato Waffles
Ingredients:
- 1/4 cup melted organic butter
- 1 1/2 cups flour (I like an organic whole wheat)
- 3 teaspoons baking powder (aluminum free)
- 1/4 teaspoon nutmeg
- 1 teaspoon salt
- 3 eggs (organic), separated
- 1 cup organic whole milk
- 1 cup mashed cooked sweet potato (Organic, and I like to wrap in foil and bake at 400 till it’s caramelized. Pack it into the 1 cup measure; I like to use a bit more.)
- If you use stevia drops, I like to add a dropper full of hazelnut, vanilla, or English toffee.
Instructions:
- Melt butter, set aside to cool slightly. Sift dry ingredients. Beat egg yolks, then combine with milk, sweet potato, and melted butter.
- Stir in dry ingredients.
- Beat egg whites till they form stiff peaks. Fold into sweet potato mixture.
- Cook on a preheated waffle iron that has been sprayed with coconut oil
