Mari Pepin Shares Her Christmas Recipe for Traditional Puerto Rican Tembleque (Coconut Pudding)

Fans got to know and love Mari Pepin on Season 25 of “The Bachelor” and Season 7 of “Bachelor in Paradise.”
And since her time on the shows, Mari has kept us up on social media as she has been spending time with her fiancé Kenny Braasch, traveling, working out, and whipping up some delicious recipes.
One of those delicious recipes is for her traditional Puerto Rican dessert called tembleque, aka coconut pudding.
In the video of herself going through the recipe, Mari explains, “Tembleque is a coconut pudding of sorts, but it’s not pudding in the typical way you’re thinking of. Tembleque is a lot firmer than traditional American-style puddings.”
She shared, “It’s delicious. I grew up eating this for dessert around the holidays, and I’m super excited to share the recipe with you all!”
For this recipe, Mari says you will need two cans of coconut milk, baking spray, ½ cup of corn starch, ¾ cup of granulated sugar, ground cinnamon, three to four cinnamon sticks, and a pinch of salt.
Mari starts this recipe off with a medium saucepan on the stove over medium heat.
She puts all but one cup of the coconut milk into the pan and saves the last cup to be used later.
Mari adds her ¾ cup of sugar and pinch of salt to the saucepan and stirs until these ingredients dissolve.
Next, she adds three or four cinnamon sticks to the mixture and waits for it to come to a very gentle boil.
While waiting for the mixture to boil, she adds the cornstarch to the remaining cup of coconut milk and creates a slurry, which will thicken the pudding.
She also sprays the container she will be serving the tembleque in with baking spray. This step is particularly important if you are planning on flipping the pudding over out of the container after refrigerating it.
Once the mixture is gently boiling in the saucepan, Mari adds the slurry of cornstarch and remaining coconut milk to the pan.
She mixes everything together gently until it gets nice and thick. Once the mixture thickens, the Bachelor Nation star adds it her glasses and ramekins and smooths over the top.
Lastly, the tembleque must be refrigerated for at least three to four hours before serving.
Once it’s chilled, sprinkle the top with ground cinnamon and serve!
