Kirpa Sudick & Demi Burnett Share ‘Easy and Delicious’ Vegan Ratatouille Recipe

Bachelor Nation stars Kirpa Sudick and Demi Burnett met on Season 23 of “The Bachelor” and have remained friends since.
The two just took to Instagram to share a hilarious recipe video where they have some fun while also cooking up a delicious and easy ratatouille dish.
Kirpa shared the ingredients and instructions needed for this recipe alongside her video and they’re listed below in case you want to try making their ratatouille.
INGREDIENTS:
1 eggplant
1 tomato
1 zucchini
1 squash
1 can of crushed tomatoes
1 onion
3 cloves of garlic
1 bundle of parsley
1 bundle of basil
1 bundle of thyme
2 bell peppers
1 tablespoon of chicken powder
2 tablespoons of olive oil
Instructions:
- Add some olive oil to a saucepan.
- Chop up the onion, garlic, bell peppers, and basil, and then add them to the saucepan.
- Season with chicken powder (or vegetable powder if you want the recipe to be vegan).
- Add one can of crushed tomatoes to the saucepan once the vegetables have softened.
- Cook to a slow boil and then pour the mixture into a baking dish.
- Slice the tomatoes, zucchini, and eggplant into thin quarter-inch-thick circles.
- Line the top of the vegetable/tomato mixture in the baking dish with rows of the sliced tomatoes, zucchini, and eggplant.
- Create your herb mix with basil, thyme, garlic, salt, pepper, and olive oil.
- Brush this mixture on top of the entire dish.
- Bake at 375 degrees F for one hour.
- Serve and enjoy!
