Bachelor Nation: Joan, thank you so much for chatting with us! What is your favorite dish to make for the holidays?
Joan: I love all holiday food because every member of my family has their favorite dish, so I make them all and we eat it for days! They all love my pineapple stuffing the most, though, so I have to share the recipe with Bachelor Nation fans.
BN: Oh, please do!
J: Okay, so, this recipe is great as a side dish for any holiday. I make it for Thanksgiving, Christmas, and Easter. My family can't get enough of it! It feeds a lot of people and is shown here in a 12 inch x 20 inch casserole dish. You can half this recipe and it will fit in a 9 inch x 9 inch casserole dish.
Ingredients:
- 2 20 oz. cans crushed pineapple, drained
- 4 sticks of butter, softened
- 1 pt. heavy cream
- 4 cups sugar
- 6 eggs
- 1 loaf Pepperidge Farm Sliced Bread (dense bread)
Instructions:
- Cream butter and sugar together.
- Add eggs and continue mixing.
- Add pineapple and cream and mix by hand.
- Cube the bread into about 1 inch x 1 inch pieces.
- Fold them into mixture and pour into greased casserole dish.
- Bake at 350 degrees for 1 hour.
- Let cool and enjoy!
BN: Okay, that looks and sounds AMAZING, Joan! We have to try that. Are there any other special foods or drinks you make during the holiday season?
J: So many! We love sangria at my house, so I make a big punch bowl full of it on Thanksgiving and Christmas and we drink it all day!
BN: Yum! And do you have any other favorite holiday traditions you do with your family?
J: Yes, on the way home from church every Christmas Eve, we drive around the neighborhoods and admire people’s house decorations. If you aren’t in the holiday spirit before then... you sure are when we finish!
