EXCLUSIVE: ‘Golden Bachelor’s’ Edith Shares Her Favorite Pozole Recipe She Makes for Thanksgiving

Edith shared that her favorite holiday tradition is having a meal with her kids and each of them bringing their own dish.
For Thanksgiving, Edith loves making pumpkin pie and her famous pozole.
Pozole is a hearty traditional Mexican soup with tender pork, chiles, and crunchy fresh toppings.

Ingredients:
- 5 pounds pork neck bones
- 1.5 pounds pork spare ribs
- 6 oz. chile Guajillo pods
- 15 tomatillos
- Half a garlic head
- 2 teaspoons sea salt
- Half a head of cabbage
- 1/2 onion, halved
- 1/2 onion, chopped
- 10 radishes, chopped
- 3 large bay leaves
- 1 can of hominy
- 8 whole fresh cilantro
- 2 teaspoons oil
- 2 teaspoons oregano
Instructions:
- Wash the pork.
- Place pork in a large pot.
- Add halved onion, salt, and 13 cups water.
- Bring to a boil at a medium heat for about an hour or until tender.
- Heat a pot with half water and add the chile Guajillo and tomatillos to cook for 20 minutes, then drain from the pot and put in a blender. Add salt and garlic and blend.
- Heat the oil in a large pan with the chopped half of the onion for 10 minutes and add the blended sauce and cook for 10 minutes.
- In the pot with the pork, add the sauce, bay leaves, and hominy, and cook for 10 minutes.
- Serve with choice of garnishes: radishes, chopped cilantro, diced onions, shredded cabbage, dried oregano, and lime.
- Eat and enjoy!
