‘Made By…’: Mari Pepin’s Recipe for Her Hearty Vegetable Chicken Orzo Soup

The fan favorite joins us exclusively to share her recipe for a delicious and hearty soup that’s perfect to help kick your cold or just fill you up with a healthy meal.

Ingredients:
1 tablespoon cooking oil
2 cups chicken broth (vegetable for vegetarian)
1 cup water
8-ounce can tomato sauce
8 ounces crushed tomatoes (canned or fresh)
1/2 medium onion, diced
3 carrots, diced
3 celery sticks, diced
1 chicken breast per person
1/2 cup uncooked orzo per person
Salt/pepper to taste
1/2 tap garlic powder, onion powder, oregano,
1 bay leaf
Instructions:
1. Add oil to medium-size pot over medium-high heat.
2. When oil is hot, add chicken breasts and cook 2 to 4 minutes per side.
3. When cooked through, remove chicken breasts and set aside.
4. Add water, broth, tomato sauce, and crushed tomatoes to pot over medium heat.
5. Add seasonings. Bring to boil.
6. When boiling, add vegetables and heat about 8 minutes.
7. Lower heat to medium and simmer for 10 mins.
8. Add orzo and cook according to package instructions.
9. Chop or shred chicken if desired and add chicken back into pot for the last 5 minutes of cooking.
10. Remove bay leaves.
11. Serve and enjoy with warm bread!
