Whitney Fransway’s Easy and Healthy Recipe for Gluten-Free/Dairy-Free Carrot Cake
Having dietary restrictions or trying to eat healthier doesn’t mean you can’t have delicious desserts!
Whitney Fransway, from Season 21 of “The Bachelor” and Season 6 of “Bachelor in Paradise,” has the perfect spring recipe that’s a healthier spin on a sweet treat.
Desserts can often be packed with processed sugars, heavy creams, and other ingredients that may leave you feeling sluggish.
But Whitney’s recipe for gluten-free, dairy-free, and low-sugar carrot cake tastes delicious without all the highly processed ingredients.
The Bachelor Nation star took to Instagram to share a video of the finished cake along with the ingredients and instructions for making it yourself.

Ingredients for the cake:
- 1 cup almond flour
- 1 1/3 cups oat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 tablespoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- 3 eggs
- 1/4 cup coconut milk, full fat
- 1/2 cup almond milk
- 1 tablespoon lemon juice
- 1/4 cup organic coconut oil refined, melted, and cooled to almost room temp
- 2/3 cup maple syrup
- 1 teaspoon pure vanilla extract
- 2 cups shredded carrots, squeezed dry with paper towels
- 1/4 cup walnuts, chopped
Ingredients for the icing:
- 1/2 cup cashews, soaked to soften
- 1/4 cup coconut cream
- 5 tablespoons maple syrup
- 2 teaspoons lemon juice
- 1/2 teaspoon pure vanilla extract
- 1/4 cup shredded coconut, unsweetened
Instructions:
- Preheat your oven to 350 degrees.
- Blend icing ingredients together in a food processor and place the icing in the fridge.
- Mix wet cake ingredients together in a mixing bowl.
- Add the dry ingredients to the wet cake ingredients mixture and stir together well.
- Add cake mix to one dish or split into two pans if you want to make a layered cake.
- Bake for 20 to 25 minutes at 350 degrees.
- Let the cake(s) cool before adding the icing and frosting the cake.
